To graduate from university, first of all you have to enroll in the university. To enroll in the university you have to have valid legal status. As you said earlier, you are out of status for 2 years. You cannot adjust your status because it's more than 180 days you are out of status. Only option for you to get back in status is to get green card. And only option for you to get green card is through marriage with US citizen / green card through asylum/ green card through U visa category / nepal get another TPS.
